(Buckwheat, Spelt, Oats, Corn, Wheat and Quinoa) A paired dinner at the London Plane exploring the historical and nutritional aspects of PNW grown grains in celebration of the annual Cascadia Grains Conference. Featuring Chef Zarah Duncanson from The London Plane, Dr. Laurajean Lewis from the WSU Food Systems Program, Micaela Colley from the Organic Seed Alliance and Valerie Segrest from the Native American Agriculture Fund. An intoxicating journey from seed to plate, this evening kicks off with a deep dive into domestication and origin and evolutionary story of each species. Tasting grains grown in the maritime Northwest, our gastronomic journey continues by focusing on the cultural significance of grain and how food has always been at the intersection of cultural identity, throughout history. We will round out the evening with deliciously paired courses, and discuss current efforts to nourish and support all communities in the Pacific Northwest, including nutritionally dense breeding programs that work collaboratively with farmers and communities. Hosted by the London Plane, this event pairs unique courses with small-batch, locally malted brews and distilled spirits.
